Clay animation is just one of many forms of animation that uses stop motion where each animated object that is a character or background is made from a malleable substance usually a type of clay.Claymation is a registered trademark in the United States, but is is often used generically in the US to refer to any animation using plasticene clay or similar material.
Anime is an abbreviation of the English word animation and it originated in Japan from manga. While anime is used in Japan to refer to animation in general in the US anime generally refers to cartoons or animated material originating from Japan.
